I’m so excited to post my first Substack newsletter with you all. For those who are new here, allow me to introduce myself - my name is Yuka, I have a TikTok and Instagram called Baking by Yuka.
I am Japanese, Korean, and Filipino and I love sharing recipes that celebrate my Asian roots. Growing up in the South, I often add an Asian-American twist to traditional dishes, blending both of my worlds. My love for the kitchen started with my Filipino grandpa, a professional cook who even had the honor of cooking for the White House! I’m excited to share some of his special recipes with you in the future.
A little about my journey:
I hold a degree in nutrition and love to create healthy and delicious meals especially for my parents. A little while ago, I began making my meal prep adventures on TikTok, joking that I was cooking as my parents’ private chef. The videos gained some traction, and some asked for the recipes – so here we are!
Why Meal prep?
I started meal prepping for my parents to help my mom focus on improving my dad’s health. Before I began, my mom used to order Sakara meals, which my dad wasn’t a fan of, so he resorted to daily takeout. As I found more free time, I took the opportunity to start meal prepping, sharing my journey on TikTok, and now on this newsletter!
What You Can Expect Here:
Every week, I prepare two different breakfasts and two different lunches for my parents. Each recipe serves four, which means they only eat each meal twice a week – no repetitive meals! If you’re cooking for one or two, simply halve the recipes.
I focus on easy, manageable recipes, mostly using pantry staples. My grocery trips usually involved just picking up fresh produce and meats. While most recipes are simple, I occasionally include more challenging dishes but always suggest easier substitutions for those looking for a quicker option.
