Alongside this chia pudding, I just dropped a recipe for Matcha Strawberry Mini Loaves
Now, let’s dive into making this Matcha Latte Chia Pudding. Think of it as a matcha almond milk latte combined with chia seeds and topped with fresh strawberries. It’s a quick breakfast option—ready in about 5 minutes, with a chill time of 2 hours or overnight. The recipe makes approximately 4-6 servings, depending on your bowl size. I use these handy little pudding cups for convenience—they’re perfect for portion control and save space in the fridge.
Recipe: Matcha Latte Chia Pudding
Servings: 4-6
Tools:
Bowl
Measuring cups
Bamboo matcha whisk, electric whisk, or hand whiskÂ
Sifter (optional)
Ingredients:
2 Cups milk of choice (I use almond milk)
2 tsp matcha powder
1 tsp vanilla extract
1-2 tsp honey (adjust to taste)
1/2 Cup chia seeds
Instructions:
Sift the Matcha Powder: In a medium bowl, sift the matcha powder to ensure there are no lumps.
Mix Matcha and Milk: Add 1/4 Cup milk to the sifted matcha and whisk until smooth and foamy. Stir in honey.
Combine Ingredients: Add the remaining milk (1 3/4 Cups), chia seeds, and vanilla extract to the matcha mixture. Whisk until everything is well combined.
Chill: Refrigerate for 30 minutes to 1 hour. After the initial chilling period, stir to break up any clumps. Continue chilling until the pudding is fully set, which takes about 2 hours or overnight.
Serve: Top with fresh strawberries, fruits, or nuts of your choice. Enjoy!
Notes:
Mixing All Ingredients at Once: While you can mix all ingredients together at once, whisking the matcha separately with milk first enhances its flavor and prevents clumps.
Storing Chia Pudding: This pudding can be kept in an airtight container in the fridge for up to 5-7 days, making it a great option for meal prep.
Avoiding Clumps: Chia seeds absorb liquid and form a gel-like texture. To prevent clumps, stir the pudding after about an hour of chilling, then let it set until fully thickened.
