This week’s all about simple meals - everything I made took 30 minutes or less to prepare. It’s been a hectic few days, so I needed meals that were quick and easy (but still delicious!). For breakfast, I prepared Carrot Cake Pudding and Spinach & Tomato Egg bites. Both of these are simple to make, using only one bowl and minimal cleanup! For lunch, I went back to my childhood - when I was 12, I had to cook dinner sometimes, and these dishes were my go-tos. If 12-year-old me could make them, I think anyone can!
