This Asian Beef Noodle recipe is so simple to make and delicious. It makes a great meal prep option because it reheats well in the microwave and takes about 20 minutes to make. The dish features ramen noodles tossed with savory, sweet ground beef coated in a soy-marinated sauce. To balance out the meal, I paired it with pickled radishes, Korean spinach salad, and sesame carrots. You can find the pickled radishes recipe here.
Notes:
Ground Beef Substitutions: Swap beef with ground turkey, pork, or chicken.
Ginger Tip: For fresh ginger, cut off about 1 ½ inches from a knob, which equals around 3 tsp minced.
Ramen Noodle Substitutions: Use soba, udon, or spaghetti noodles if you don’t have ramen.
Noodle Tip: Cook noodles just until al dente, as they will continue cooking when mixed with the sauce.
Storage: This meal keeps well in the fridge for 3-4 days in an airtight container, making it perfect for meal prep.
Recipe:
Ingredients:
1 pound ground beef
3 tsp fresh ginger, minced
6 garlic cloves, minced
⅓ cup brown sugar
½ cup soy sauce
4 Tbsp hoisin sauce
2 tsp sesame oil
¼ tsp red pepper flakes
½ tsp black pepper
10 oz ramen noodles
3 stalks green onions, chopped
2 tsp sesame seeds
Instructions:
Sauté Aromatics: Heat sesame oil in a large pan over medium heat. Add minced garlic and ginger, cooking until fragrant (about 1 minute).
Cook Ground Beef: Add ground beef to the pan, breaking it up as it cooks. Drain any excess fat.
Cook Noodles: While the beef cooks, cook ramen noodles according to the package instructions, then drain.
Make Sauce: In a small bowl, mix together brown sugar, soy sauce, hoisin sauce, sesame oil, black pepper, and red pepper flakes.
Combine: Once the beef is browned, add the sauce to the pan and simmer for about 3 minutes, allowing it to thicken.
Toss with Noodles: Add the cooked noodles to the beef mixture and toss until evenly coated.
Garnish and Serve: Remove from heat, garnish with green onions and sesame seeds, and enjoy!
