Whenever I don’t feel like cooking, I make this spicy tuna bowl with rice. It’s my go-to lazy dish and reminds me of a cheaper version of sushi. I used to make it as a kid when I wanted something quick and didn’t want to deal with a lot of dishes. This recipe only takes about 10 minutes to prepare, making it one of the laziest lazy meal. I paired the spicy tuna with rice, a ramen egg, sushi ginger, chili crunch cucumber salad, and pickled radishes. You can find the pickled radish recipe here.
Notes:
Rice Vinegar Substitute: If you don’t have rice vinegar, white vinegar works just as well.
Storage: The cucumber salad can be stored in a mason jar in the fridge for 3-4 days.
Nori: The mini nori packets make this dish feel like a fun sushi meal, perfect for hand-rolled bites.
Tuna Variations: You can use flavored canned tuna (e.g., spicy, lemon, or garlic) to add an extra layer of flavor without additional ingredients.
Ramen Eggs: If you don't have time to make a ramen egg, a regular boiled egg works just fine.
Extra Crunch: If you like a bit of texture, try adding a sprinkle of toasted sesame seeds or chopped scallions to the tuna or rice.

Spicy Tuna:
2 (5 oz) cans tuna (drained)
2 Tbsp sriracha sauce
1 tsp chili oil
½ tsp rice vinegar
2 stalks green onions, chopped
¼ cup Kewpie mayo
Salt and pepper, to taste
4 mini nori packets
Chili Crunch Soy Cucumber Salad:
1 English cucumber (thinly sliced)
½ Tbsp salt
¼ cup soy sauce
2 Tbsp rice vinegar
2 tsp sugar
½ Tbsp chili oil crunch
2 tsp sesame oil
Directions:
Spicy Tuna:
In a bowl, mix the drained tuna, sriracha, chili oil, rice vinegar, green onions, Kewpie mayo, and salt and pepper to taste.
Make the Bento:
Add rice to your meal prep container and garnish with furikake (optional).
Place the spicy tuna mixture on top of the rice.
Add cucumber salad, pickled radishes, a ramen egg, and sushi ginger on the side.
Serve with mini nori packets so you can make a hand-rolled tuna sushi on the spot!
Chili Crunch Soy Cucumber Salad:
Thinly slice the cucumber and place it in a medium bowl with salt. Let it sit for 10 minutes, then rinse and pat dry.
In a bowl, mix together soy sauce, rice vinegar, sugar, chili oil crunch, and sesame oil.
Add the dried cucumber slices to the dressing and toss to combine.
