This week’s meal prep was a hit—I even got a “this is good” from my Asian parents. My goal this week was to bring a balance of sweet and savory options for breakfast, and gluten-free lunches for anyone with dietary restrictions.

For breakfast, we have both sweet and savory options.
Breakfast #1: Gyeran-ppang (Korean Egg Bread)
A classic Korean street food that’s lightly sweet from the bread and savory from the ham and cheese. This one’s great because you can use staple ingredients you probably already have.Breakfast #2: Blueberry Crumble Muffins
These blueberry muffins are a family recipe from my grandpa. They’re moist, not too sweet, and packed with blueberries and lemon zest.
Lunch
As usual, we’re doing bento-inspired lunches this week with two flavorful Asian dishes.
Lunch #1: Bulgogi Rice Bowl
A personal favorite! This bowl is high in protein with lots of veggies, inspired by my go-to order at Korean restaurants. It’s packed with delicious toppings like shiitake mushrooms, bean sprout salad, and soft-boiled eggs.Lunch #2: Cabbage Rolls Bento
Imagine pan-fried dumplings but with napa cabbage leaves instead of wrappers. They’re filled with minced pork and mushrooms, making a light yet satisfying meal.
