Gyeran-ppang, or Korean egg bread, is a Korean street snack. This snack is a fluffy, slightly sweet bread with a whole egg in the center. The mix of sweet, savory, and salty flavors from the egg, ham, and mozzarella makes it a perfect breakfast!
Notes:
Prevent Sticking: Be sure to coat your mini loaf pan well with nonstick spray or butter to make removing the loaves easy.
Optional Toppings: If you like, add chopped green onions or sprinkle with a little black pepper or sesame seeds for extra flavor and garnish.
Egg Yolk Preference: For a more visually appealing yolk, crack each egg carefully onto the batter without breaking the yolk. If you prefer a more blended look, give the yolk a gentle stir once it’s on the batter.
Adjust Sweetness: For a more traditional gyeran-ppang, you can increase the sugar by an extra tablespoon to enhance the sweet and savory contrast.
Reheating Tips: Reheat leftovers by microwaving for about 30 seconds, or place them in the oven at a low temperature (around 300°F) to warm without overcooking the egg.
Recipe
Yield
8 Mini Loaves
Ingredients
¼ cup unsalted butter, melted
½ cup sugar
1 tsp salt
3 tsp baking powder
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 ½ cups milk
3 eggs (for batter)
8 eggs (for topping)
¼ cup mozzarella cheese, shredded
4 slices of ham, cut into bite-sized pieces (optional)
Instructions
Preheat Oven: Preheat your oven to 400°F (200°C). Coat a mini loaf pan with nonstick spray.
Make the Batter: In a medium bowl, whisk together the melted butter, sugar, salt, baking powder, vanilla extract, and 3 eggs until smooth. Gradually add in the flour and milk, mixing until the batter is smooth and well combined.
Assemble the Loaves: Pour the batter into the mini loaf pan, filling each section about halfway. Sprinkle a little shredded mozzarella cheese and ham (if using) over the batter.
Add the Egg: Carefully crack an egg on top of each loaf. If you prefer, you can gently break the yolk to give the baked bread a more even egg layer.
Bake: Place the mini loaf pan in the oven and bake for 13-15 minutes, or until the bread is golden and the eggs are set.
Enjoy: Remove from the oven, let cool slightly, and enjoy your fresh gyeran-ppang!
