Happy Sunday!
We’re back with another meal prep! This week’s meal prep was quick and simple, so let’s get into it.
For breakfast, we’re going with both sweet and savory options:
Sweet: Tiramisu chia pudding - a chocolate espresso chia pudding topped with a mascarpone cream cheese mixture sweetened with maple syrup.
Savory: Copycat spinach feta and egg white wrap - I finally found lavash wraps at the grocery store, so I had to try making Starbuck’s spinach and feta wrap at home. I buy these wraps every time I go to Starbucks, but lately, I’ve been avoiding Starbucks and supporting local coffee shops instead. So, I figured I’d try making these myself!
Most copycat recipes online are close, but something always felt missing. When I checked Starbucks’ ingredient list, I saw a sun dried tomato cream cheese, which most recipes don’t include. So I decided to give it a try and see. The cream cheese actually seemed to help the wrap. These are the types of breakfasts I actually get excited to eat in the morning.
For lunch, I went with a Japanese and Vietnamese classic:
Miso butter teriyaki salmon - I wanted a different take on teriyaki salmon, so I combined miso butter with a teriyaki sauce for a sweet and salty umami-packed dish. The salmon gets coated with miso butter, topped with teriyaki, then broiled for a caramelized finish.
Shrimp vermicelli - This one is so, so simple. Just marinate the shrimp, cook it, prep the vermicelli, prep the raw vegetables, and you’re done! I’m not a huge shrimp fan, but my parents love shrimp and they loved the dish!
