Tiramisu Chia Pudding
If you’re craving tiramisu for breakfast, this is the perfect way to start your day. It tastes just like the classic dessert but comes with a shot of espresso for a morning caffeine kick.
Ingredients
Chia Pudding:
¼ cup cocoa powder
2 Tbsp maple syrup
1 tsp vanilla extract
1 ½ cups almond milk
½ cup chia seeds
1 shot espresso (or ½ Tbsp instant coffee powder)
½ tsp salt
Mascarpone Topping:
8 oz mascarpone or cream cheese
1 tsp vanilla extract
2 Tbsp maple syrup (or sweetener of choice)
Cocoa powder for dusting
Directions
Make the Chia Pudding:
In a large bowl, whisk together the cocoa powder, maple syrup, vanilla extract, almond milk, chia seeds, espresso, and salt until well combined.
Cover and refrigerate for at least 1-2 hours (or overnight) until thickened.
Make the Mascarpone Topping:
In a small bowl, add mascarpone, vanilla extract, and maple syrup.
Using a handheld electric mixer, beat until light and fluffy.
Assemble:
Divide the chia pudding into 6 small cups.
Top each with a dollop of mascarpone mixture and dust with cocoa powder.
