Happy Sunday!
Christmas is only 17 days away- yay! Naturally, I had to make something Christmas-themed for this week’s meal prep: peppermint mocha chia pudding. It’s basically a peppermint mocha, but in a chia pudding form. Humble brag, but this one’s my mom’s favorite chia pudding flavor so far.
For the second breakfast, I was craving a McMuffin, so I had to make one. This McMuffin is served with grilled onions and homemade English muffins. This was my first time making English muffins, so I don’t quite have a perfect recipe yet, but they came out great! They weren’t as hard as I thought. Since I’m still researching English muffin recipes, I’ll just include the McMuffin recipe for now and share the muffin recipe later.
Lunch prep this week feels familiar and yet so different. First up, a classic Korean combo: Kimchi fried rice and tuna gimbap. My favorite kimchi right now is the Jongga brand from Costco.
The second lunch is butter chicken with basmati rice. I wish I had an Indian restaurant within a reasonable distance, but the closest one is an hour away. So, I have to make my own, and it will suffice. Butter chicken might be the “safe” choice on an Indian menu like going to a Korean bbq and getting bulgogi, but both are sooo good that I don't care.
Oh, and I did some baking! Recipes for these will drop on Wednesday, but here’s a sneak peek: Eggnog cinnamon rolls and persimmon croissants.
