Like a Peppermint mocha but in a chia pudding form.
Achievement: My mom told me this is her favorite chia pudding flavor I have made.
Recipe
Ingredients
½ cup chia seeds
2 cups almond milk (or your milk of choice)
1 tsp peppermint extract
1 tsp instant coffee powder
¼ cup cocoa powder
1–2 Tbsp agave syrup (adjust to your sweetness preference)
Toppings (optional but highly recommended)
Cocowhip
Chocolate sprinkles
Directions
In a large bowl, whisk together all the ingredients: chia seeds, almond milk, peppermint extract, instant coffee powder, cocoa powder, and agave syrup.
Let the mixture chill in the fridge for 2–4 hours. Stir it at least once while it sets to prevent the chia seeds from clumping.
Once the pudding is thickened, divide it into six servings. Top with Cocowhip and sprinkle some chocolate sprinkles for a festive touch.
