Happy Sunday!
This week’s meal prep theme is Hawaiian Plate Lunch. A few things triggered the craving:
The live-action Lilo & Stitch movie (I haven’t watched it... and probably won’t)
My great auntie’s 70th Jubilee at the Roman Catholic Church in Hawaii
And my grandma is in Hawaii visiting family without me.
To make it worse (or better?), she sent me her manapua recipe, and I may have forgotten about the dough and let it rise a little too much. The filling tasted good though! I’m still recipe testing, so once I get it right like my favorite manapua place in Oahu, I’ll share it!
Anyway, here’s what I actually did make for this Hawaiian-inspired plate lunch meal prep (minus the manapua misstep):
Breakfast #1: Mango Sticky Oats

Inspired by Thai mango sticky rice, this is my take on it. It is a chilled overnight oats and chia pudding hybrid. A little sweet and refreshing. Some versions use cooked oatmeal, but I went with this format for that creamy, pudding-like texture.
Breakfast #2: Ham & Cheese Hawaiian Bread Rolls

This one’s simple but such a hit: fluffy Hawaiian rolls stuffed with ham, egg, and American cheese. Basically a breakfast sandwich meets King’s Hawaiian magic. A crowd favorite this week.
Lunch #1: Huli Huli Chicken Meal Prep

Baked-and-broiled chicken thighs marinated in pineapple juice, soy sauce, and brown sugar. Sweet, smoky, and a little charred at the edges. Served with Hawaiian mac salad and coconut sticky rice. This one was my dad’s favorite, but he loves huli huli and manapuas.
Lunch #2: Lomi Lomi Salmon Meal Prep

This one might’ve been my favorite. Lomi lomi salmon is like Hawai‘i’s version of pico de gallo, but with salted salmon. I didn’t have salted salmon, so I subbed in smoked salmon, and it still hit the spot. Paired it with coconut sticky rice and more mac salad on the side.
