Told y’all I’d be back with my Sunday newsletters. This week was a little bit of everything! It’s getting so hot down here that I’ve officially sworn off the oven and anything that keeps the stove on too long. So this week’s meal prep is all about quick and easy dishes. Both breakfasts and lunches can be made in under 30 minutes and with just one pot or pan. Fewer dishes, faster prep, and no sweat. Let’s get into it.
Breakfast #1: Chai Tea Chia Pudding

I never really order chai, but if it’s in front of me, I’ll drink it. My dad, on the other hand, loves a chai latte, which is funny, because he usually sticks to iced tea and black coffee. So this chia pudding was for him. My mom and I are the only ones who usually eat chia pudding, but I wanted to make one he might actually enjoy. He loved this one because it tasted just like a chai latte. I don’t think I’ve fully convinced him to regularly eat chia pudding yet, but this one got close.
Breakfast #2: Breakfast Potato Bowl

My dad and I both agreed this was the winner of the week for breakfast. We drizzled it with some Chick-fil-A sauce and it hit the spot. When I’m out for breakfast I always order breakfast potatoes with sautéed peppers, but I’m not paying $5 for a tiny bowl of them anymore. I’ve been trying to recreate them at home for a while, and I finally got the texture just right. The trick was microwaving the potatoes first to make them soft on the inside, then pan-frying them to get that crispy outside. Tony’s seasoning on top adds spice and flavor. I served it with soft scrambled eggs to make a full breakfast bowl for the week.

My mom’s been asking for more vegetable-based meals, so this one is all veggies and tofu. The sweet soy sauce glaze makes everything taste so good, and a quick sauté keeps the veggies crisp without turning mushy. This one’s super flexible, use whatever vegetables you like and sauté them in the same glaze. It’s simple but flavorful.

I had never had pastina until my Jersey Shore Italian boyfriend introduced me to it. His mom made it for me, and I loved it. It’s a mix between pasta and soup, like if cacio e pepe and chicken soup came together. It’s warm, cheesy, and comforting. I make it whenever I’m sick or when I want some soup.
