Chai Chia Pudding
This is basically a chai latte you can eat with a spoon. I accidentally had my dad buy the Tazo Chai Latte concentrate instead of tea bags (oops), but it turned out great. If you're watching your sugar, I'd recommend using chai tea bags instead so you can control the sweetness.
Note:
If you're using tea bags, steep 2 chai tea bags in 1 cup of almond milk (warm) and let it cool before using.
Ingredients
1 cup chai tea (I used the Tazo Chai Latte concentrate – see note above if using tea bags)
1 cup almond milk
½ cup + 1 Tbsp chia seeds
½ tsp salt
Garnish
Cocowhip
Ground cinnamon
Black sesame seeds
Directions
In a medium bowl, mix together the chai tea, almond milk, chia seeds, and salt.
Stir well to combine and place in the fridge to set for 60–90 minutes. Make sure to stir once or twice during that time so the chia doesn’t clump.
Once it’s thickened up, divide into 6 small pudding cups.
Top with Cocowhip, a sprinkle of cinnamon, and a pinch of black sesame seeds before serving.
