Happy Sunday!
This week's meal prep was Japanese-inspired with a touch of Canadian. And by Canadian, I mean Canadian bacon. This week I had so much fun making the meal prep. It was a good bit of trial and error, but let’s get into it.
First up is black sesame matcha chia pudding. I originally attempted a Miffy matcha tiramisu chia pudding, but let’s just say the Miffy stencil did not want to cooperate. I ended up covering the whole pudding with matcha powder instead. Aesthetic mishaps aside, the flavor turned out great! I got the idea from a matcha black sesame cheesecake I saw on Pinterest and thought I could make it into a chia pudding version. The black sesame gave it a nutty aroma that balanced the sweetness of the matcha mascarpone to make it not too sweet.
Next, we have a Canadian bacon breakfast sandwich. I love making these because the combo of brioche buns and soft scrambled eggs has been my favorite as of late. These are my parents' absolute favorite and they’ve been begging for more, so I made them with grilled onions and Canadian bacon this time.
Lunch was a mix of Japanese and Chinese flavors.
First, lazy shumai bento. I call it lazy because if my grandma saw how I wrapped these, she’d be mad at me. But they looked the same in the end and took two seconds to wrap! This was my and my parents’ favorite. I topped them with salmon roe for an extra pop of texture. Traditionally, shumai are steamed, but I pan-fried them instead because I love that crispy bottom. If you prefer steamed, you can definitely do that as well.
Next up, chicken yakitori. Normally, yakitori is grilled, but I cooked these in a cast-iron skillet instead. Grilling is great, but it’s too much work sometimes. Cooking them in the skillet gave them a nice char, which added the smoky flavor you’d be looking for on the grill anyway. I skewered them with alternating pieces of chicken thigh and green onion, then brushed them with teriyaki sauce. They all turned out so good, but if I had to pick a favorite, the shumai still wins!
