Matcha Black Sesame Chia Pudding

Matcha Black Sesame Chia Pudding Recipe
Ingredients
Black Sesame Chia Pudding
2 cups almond milk
½ cup chia seeds
1 tsp vanilla extract
2 Tbsp black sesame seeds (or black sesame powder)
2 Tbsp honey
Pinch of salt
Matcha Mascarpone Topping
8 oz mascarpone cheese, room temperature
2 Tbsp honey
1 ½ Tbsp matcha powder, plus more for dusting
Instructions
Prepare the Black Sesame Powder
Using a mortar and pestle, grind the black sesame seeds into a fine powder.
Alternatively, use a coffee grinder or pre-ground black sesame powder.
Make the Chia Pudding
In a medium bowl, whisk together the almond milk, chia seeds, vanilla extract, black sesame powder, honey, and salt.
Cover and refrigerate for 1–2 hours, or until thickened.
Prepare the Matcha Mascarpone Topping
In a separate bowl, add the mascarpone cheese, honey, and matcha powder.
Using a handheld mixer, whip until smooth and fluffy.
Assemble
Divide the chia pudding into six small cups or jars.
Spoon the matcha mascarpone topping over each serving.
Lightly dust with matcha powder.
