Happy Sunday!
We are back with another meal prep! I’ve been sick for the past two weeks with this lingering sickness, so keeping up with meal prep has been a bit hard. To keep it manageable, I went for quick and simple recipes this week.
This week’s menu features two traditional Japanese-inspired lunches: Yakisoba and gyudon. Both dishes took about 20 minutes each to prepare, and I made two large batches of vegetable side dishes to share between them.
The gyudon is a slight twist on how it’s classically made, with a more tomato-forward umami flavor. Meanwhile the Yakisoba is more traditional, as it’s stir-fried with pork belly, cabbage, and bean sprouts.
For breakfast, I kept things easy with muffins and chia pudding. First up, olive oil chocolate muffins—the olive oil gives them a luxurious richness that makes the chocolate feel extra fancy.
The second breakfast is a new flavor for my chia pudding series: Black Forest Chia Pudding. I’ve been wanting to make this for a while, but fresh cherries have been so hard to find. Luckily, Whole Foods finally had them in stock, so I jumped at the chance to create this combo.
