Yakisoba Meal Prep
This week, I’m meal prepping a Japanese classic—yakisoba! It’s a flavorful stir-fry packed with veggies, pork belly, and noodles. It only takes about 30 minutes to whip up, and with the addition of side dishes, it’s perfect for lunches or dinners all week.
Side Dishes:
Japanese Cucumber Salad: Light and refreshing.
Spinach and Carrot Salad: Sweet and tangy with a pop of sesame flavor.
Kimchi: My go-to is from Costco, and it adds a delicious kick!

Yakisoba Recipe
Ingredients
4 packages ramen noodles
2 Tbsp sesame oil
½ yellow onion, thinly sliced
8 oz pork belly, thinly sliced and cut into bite-sized pieces
4 oz cabbage (I used purple cabbage due to availability, and it worked great!)
8 oz mung bean sprouts
¼ cup Worcestershire sauce
¼ cup tonkatsu sauce
½ tsp black pepper
Directions
Cook the noodles: Boil ramen until al dente. Drain, cool, and set aside.
Stir-fry: Heat sesame oil in a skillet over medium heat. Sauté onion and pork belly until golden and crispy.
Add veggies: Stir in cabbage and bean sprouts, cooking until the cabbage begins to soften.
Sauce it up: Add Worcestershire and tonkatsu sauces. Cook until the liquid is absorbed, stirring constantly. Set aside.
Japanese Cucumber Salad
Ingredients
2 English cucumbers, thinly sliced
¼ cup rice vinegar
2 Tbsp sugar
½ tsp salt
2 tsp soy sauce
Directions
Sprinkle cucumbers with 2 tsp salt, toss, and let sit for 10 minutes. Rinse, drain, and pat dry.
Mix rice vinegar, sugar, salt, and soy sauce. Marinate cucumbers for 1 hour.
Sprinkle with sesame seeds before serving.
Spinach and Carrot Salad
Ingredients
3 carrots, shredded
2 cups spinach, blanched
¼ cup rice vinegar
2 Tbsp sugar
½ tsp salt
2 tsp soy sauce
Directions
Blanch spinach for 1 minute. Cool and squeeze out excess water.
Mix vinegar, sugar, salt, and soy sauce. Add carrots and spinach.
Marinate for 1 hour and garnish with sesame seeds.
Assembly
Divide yakisoba into meal prep containers.
Add cucumber salad, spinach and carrot salad, and a scoop of kimchi to each container.
