We’re back with another meal prep for my parents. This week was a bit sad, but we’re taking a break from the news and diving into meal prep, yay!
Only one breakfast this week, I made so many pancakes that it fed us the whole week. I was craving them this week, so I whipped up mini pancakes using my grandpa’s classic recipe. My grandpa would always say it is less about the recipe and more about the technique! I also had a bag of frozen fruit to use up, so I turned it into a quick fruit salad to go with the pancakes.
Lunches this week were simple but delicious. I made lemongrass beef vermicelli bowls, which might just be my new favorite—it’s even better than lemongrass chicken! I also experimented a bit with how sushi is made and created smoked salmon roll-ups. Instead of nori, I used smoked salmon, and whipped cream cheese replaced the rice.
