Thai Tea Chia Pudding
A Thai tea, but in chia pudding form.
Ingredients
½ cup chia seeds
3 Thai tea bags
1¾ cups almond milk
¼ cup honey or maple syrup
Black sesame seeds (for garnish)
Vanilla bean yogurt (for topping)
Directions
In a small pot, bring the almond milk to a gentle simmer over medium heat—be careful not to scorch it.
Once simmering, add the tea bags and steep for 8–10 minutes. The longer they steep, the stronger the flavor.
Remove the tea bags and let the tea cool slightly.
In a mixing bowl or jar, stir together the brewed tea, honey (or maple syrup), and chia seeds until well combined.
Divide the mixture evenly into six small pudding cups.
Cover and let chill in the fridge for at least 90 minutes or overnight, until thickened.
Before serving, top with a dollop of vanilla bean yogurt and a sprinkle of black sesame seeds.
