Shredded chicken quesadilla
This is the kind of meal that makes leftover night feel like a win. After making soy lime chicken earlier in the week, I shredded up the leftover chicken and turned them into these crispy, cheesy quesadillas. It took no time at all, especially since I already had everything prepped. I used my stand mixer to shred the hot chicken in seconds. I served it with a quick guacamole blended with more of that garlic sauce and it was so good. It is a little different than your traditional guacamole recipe, but I wanted to repurpose the toasted garlic sauce and it was delish.
Notes
Shortcut tip: Shred hot chicken in a stand mixer with the paddle attachment; it’s fast and hands-free.
Crispy tip: Use butter or oil to toast the tortillas. Butter gives the best flavor, but oil works if you’re keeping it dairy-light.
