Rolled Katsu Bento
So this rolled katsu is a little different than the traditional kind. I couldn’t get thinly sliced pork belly, so I made this two ways. First, I used the leftover honey ham from the Korean Street Sandwiches. I also tried it with pork belly slices, but since they weren’t thin enough, they didn’t cook all the way through during frying. To fix that, I let them rest, sliced them in half, and baked them in the oven to finish cooking and get a caramelized top. Turned out great. Let’s make it.
