Passionfruit Chia Pudding
Vanilla bean chia pudding layered with a tangy passionfruit jelly and topped with fresh passionfruit.
Ingredients
Chia Pudding
½ cup chia seeds
1¾ cup almond milk
¼ tsp salt
1–2 Tbsp honey (adjust to taste)
1 tsp vanilla bean paste
Passionfruit Jelly
1 packet plain gelatin (check if Jello packet has sugar)
If it doesn’t add 1-2Tbsp of sugar or it might be sour
1 Tbsp cold water
â…“ cup boiling water
Pulp from 2 ripe passion fruits
Topping
3 passion fruits, halved (for garnish)
Instructions
1. Make the Chia Pudding
In a bowl, whisk together chia seeds, almond milk, salt, honey, and vanilla bean paste.
Cover and place in the fridge for 60–90 minutes.
After chilling, stir well to break up any clumps.
Divide evenly into 6 small pudding cups or jars.
2. Prepare the Passionfruit Jelly
In a small bowl, sprinkle gelatin over 1 Tbsp cold water. Let it bloom for 5 minutes.
Add â…“ cup boiling water and stir until the gelatin dissolves completely.
Stir in the pulp from 2 passion fruits (seeds and all).
3. Layer the Jelly
Carefully spoon or pour the passionfruit jelly over the set chia pudding.
Return to the fridge and chill for another 60–90 minutes, or until the jelly is fully set.
4. Top & Serve
Just before serving, top each cup with fresh passionfruit pulp from the halved passionfruits.
Enjoy chilled!
