This week’s meal prep features Niku Miso, a delicious Japanese dish made with ground beef flavored with miso. It’s pairs well with steamed rice or noodles and a great protein for a bento box. This savory and slightly sweet dish can be stored in the fridge for 3-4 days, making it ideal for meal prep. I paired the Niku Miso with rice, soy cucumbers, and gamja salad for a balanced and flavorful meal. It’s simple, flavorful, and incredibly easy to prepare.
Notes:
Ground Beef: You can substitute ground beef with ground turkey, ground pork, or ground chicken for a lighter option or variety.
Miso: White miso (shiro miso) is preferred for its mild sweetness, but if you want a bolder flavor, you can use red miso, which will result in a saltier and more intense dish.
How to make Nike Miso
Niku Miso Recipe
Servings: 4
Ingredients:
1-inch piece of ginger (about 1 tsp grated)
3 garlic cloves, minced
2 stalks of green onions, chopped
1 Tbsp sesame oil
1 lb ground beef
5 Tbsp white miso
2 Tbsp sugar
Sauce:
4 Tbsp mirin
4 Tbsp sake
2 Tbsp soy sauce
Directions:
Make the Sauce: In a small bowl, mix 4 Tbsp mirin, 4 Tbsp sake, and 2 Tbsp soy sauce. Set aside.
Aromatics: In a large pan over medium heat, heat 1 Tbsp sesame oil. Add the chopped green onions and sauté until fragrant. Then, add grated ginger and minced garlic, cooking for another minute until aromatic.
Cook the Ground Beef: Add 1 lb of ground beef to the pan. Break the meat apart and cook until browned and no longer pink. Drain any excess fat.
Add Miso: Stir in 5 Tbsp of white miso and 2 Tbsp of sugar, mixing everything until the miso and sugar are fully combined.
Finish with Sauce: Pour the sauce mixture into the pan and let it cook on medium heat until the liquid reduces and thickens. Once reduced, remove from heat.
Serve: Serve the Niku Miso over steamed rice and garnish with sesame seeds for a delicious and satisfying meal.
Storage:
This Niku Miso will keep well in the fridge for up to 3-4 days, making it ideal for meal prepping. Store in an airtight container.
Meal Prep Tips:
For meal prep, I paired the Niku Miso with steamed rice and four sides for a bento-style lunch:
Sigeumchi-namul (Korean spinach salad)
Sesame carrots
Din Tai Fung cucumber salad (copycat recipe)
Gamja salad (Korean potato salad)
These side dishes add a variety of textures and flavors to the meal, making each bite exciting!
