Happy Sunday!
My whole family left, and while it was a little sad, it’s also been so freeing because I have time to cook and write again. Though I do miss my mom being nicer to me than usual while the mother-in-law (my grandma) was around.
This week for meal prep, I did a sweet and savory combo. For breakfast, everything was sweet, and for lunch, everything was savory. I mixed in some classics with my key lime chia pudding and mini lasagnas! I recently made lasagna for my Italian Jersey Shore boyfriend, and he said it was his favorite lasagna he’s ever had (he could be lying and biased), so I decided to make some for meal prep this week. Also, everybody knows lasagna is best the day after you make it, so I thought it would be perfect for meal prep. Let’s dive in!
Key Lime Pie Chia Pudding (Find the recipe here)
For breakfast, I made a key lime pie chia pudding. It’s starting to get warm again, and whenever I think of hot days, I think of key lime pie. This chia pudding is simpler than my other recipes. It’s a regular chia pudding base with a hint of lime, then topped with a dollop of key lime pie yogurt. My favorite yogurt brand is Ellenos, but my second favorite is Icelandic Provisions. They have a key lime flavor that’s tasty, so I used that for a more key lime pie flavor and some extra probiotics.
Lemon & Blueberry Mini Loaves (Find the recipe here)
Next up, lemon and blueberry mini loaves. They’re like a replica of Starbucks lemon loaves but with the added blueberries. I threw them in there so I could tell myself (and my parents) we’re getting our daily fruit intake (we aren’t). It makes me feel better, and the blueberries add a nice balance to the lemon flavor. This one was my mom’s favorite out of the two breakfast options.
Mini Lasagnas (Find the recipe here)
This is a classic lasagna recipe with homemade meat sauce and ricotta filling. When I made this for my Italian Jersey Shore boyfriend, he literally said it was better than his grandma’s recipe. I feel like lasagna and banana bread are those dishes that whoever makes them for you as a kid always tastes better when they make it—no matter if someone else uses the same recipe. So, although this might not taste the same as your mom’s recipe, my family and boyfriend love it, but that could be because they love me. Try this with caution! It does have fresh mozzarella slices and fresh basil, so I think it’s pretty darn good. I have to say, this meal prep was my mom’s and dad’s favorite. My dad loved it so much that he ate mine before I could collect my chef’s tax.
Kimchi Gimbap with Soba Noodles (Find the recipe here)
Last up is kimchi gimbap with soba noodles on the side (don’t judge how I rolled these, I was tired). I got inspiration from Costco’s kimchi and cheese rice balls (I’m literally eating it right now as I write this). They’re my new favorite Costco find because they heat up so easily and are cheesy and delicious. I didn’t have a side planned when I made this meal prep, so I just threw some soba noodles together, tossed them in a simple soy and honey dressing, and topped them with cucumber and nori. It was light, refreshing, and balanced out the tangy, cheesy, and hearty gimbap. This one’s only as good as your kimchi, so choose wisely!
