This week’s breakfast features Matcha Collagen Overnight Oats Chia Pudding – a blend of matcha, chia seeds, oats, and collagen powder, topped with macerated strawberries and yogurt. It’s the perfect mix of creamy oats with a sweet strawberry topping, and it’s loaded with skincare-friendly ingredients like collagen and antioxidants from the matcha and strawberries.
This recipe is super easy and ideal for meal prep. It is a simple “dump everything in” recipe, making it perfect for busy mornings. While it’s called “overnight oats” the pudding only takes about 2 hours to set, so you don’t need to wait until the next day to enjoy it!
Notes:
Collagen Powder Substitutes: I used Vital Proteins collagen powder, but feel free to skip it if you don’t have any on hand.
Sweetener: I use honey, but you can swap it out for maple syrup, agave syrup, or coconut sugar.
Yogurt Variety: You can use any yogurt you like – I used vanilla bean yogurt, but you can use Greek yogurt to add more protein or dairy free yogurt
Setting Time: Though the title says “overnight,” the pudding will be ready in just 2 hours.
Meal Prep Tips: This recipes makes about 6 servings. Prepare them in individual cups for an easy grab and go breakfast. These pudding cups stay fresh in the fridge for 3-4 days.
Tips & Tricks:
Whisking Chia Seeds: After mixing, let the pudding sit for an hour or two then stir again to prevent clumping.
Macerated Strawberries: These are fresh strawberries softened by soaking in sugar, which brings out their natural juices, making them syrupy and sweet.
Overnight Maceration: The longer you let the strawberries sit the sweetness increases and they will become syrupier.
Recipe:
Ingredients:
3 Tbsp matcha powder
1 cup oats
2 Tbsp chia seeds
2 Tbsp honey (adjust to taste)
1 tsp vanilla extract
1½ cups almond milk (or milk of choice)
1 scoop collagen powder
Macerated Strawberries:
1 Tbsp sugar
2 cups strawberries, chopped
1 cup yogurt (I used vanilla bean)
Instructions:
Matcha Milk: Sift the matcha powder into a small bowl. Whisk in ¼ cup almond milk until foamy and fully incorporated.
Make the Pudding: In a large bowl, combine chia seeds, oats, collagen powder, honey, vanilla, and the matcha milk mixture. Whisk until well mixed.
Set: Cover the mixture and place it in the fridge for 2 hours. After the first hour, give it a stir to prevent clumping.
Macerate the Strawberries: While the pudding sets, combine chopped strawberries and sugar in a small bowl. Let them sit in the fridge for at least 15 minutes to release their juices.
Assemble: Divide the chia pudding into individual cups. Top each with macerated strawberries and a layer of yogurt.
