Lemon Poppy Seed Mini Loaves

Ingredients:
3 eggs
1 cup granulated sugar
1 cup sour cream
½ cup canola oil
1 tsp vanilla extract
2 Tbsp lemon zest
1 Tbsp lemon juice
1 Tbsp poppy seeds
1 ½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
Directions:
Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the eggs, sugar, sour cream, and oil until just combined (don’t overmix).
Stir in the lemon zest and lemon juice.
Add the flour, baking powder, salt, and poppy seeds. Stir until everything comes together—again, don’t overmix!
Divide the batter evenly into a mini loaf pan or pour it into one large loaf pan.
Bake for 20-25 minutes for mini loaves or about 50 minutes for a single large loaf.
Let the loaves cool completely before slicing in.
