Key Lime Pie Chia Pudding
This chia pudding is quick and easier than most of my other chia pudding recipes. It has a creamy texture with a refreshing citrusy kick, perfect for a light breakfast.
Ingredients
Chia Pudding:
½ cup chia seeds
1 ½ cups almond milk
Zest of 1 lime
2 Tbsp agave syrup (or any preferred sweetener)
½ tsp vanilla extract
Key Lime Yogurt Layer:
2 (5 oz) containers Icelandic Provisions Key Lime yogurt
For Garnish:
Lime slices
Directions
In a large bowl, whisk together the chia pudding ingredients until well combined.
Let the mixture sit in the fridge for 1-2 hours, stirring once after 30 minutes to prevent clumping.
Once set, divide the pudding into six serving cups.
Top each with a dollop of key lime yogurt.
Garnish with lime slices and enjoy!
