Italian Sausage Alfredo Meal Prep
For lunch this week, I made a creamy Alfredo pasta mixed with roasted asparagus, mushrooms, spinach, and Italian sausage. This Alfredo sauce combines three cheeses for a rich, smoky, and cheesy flavor. Let’s make it!

Main Ingredients:
1 lb Italian sausage
1 lb linguine
8 oz mushrooms, thinly sliced
1 bunch asparagus, trimmed
3 cups spinach
Alfredo Sauce:
8 Tbsp unsalted butter
1 Tbsp olive oil
5 garlic cloves, minced
1 pint heavy cream
½ - ¾ cup freshly grated Parmesan
¾ - 1 cup Asiago cheese, plus more to taste
¾ cup mozzarella
Salt & pepper, to taste
Parsley, for garnish
Directions
Roast the Asparagus:
Preheat oven to 425°F.
Place asparagus in a mixing bowl, drizzle with 2 Tbsp olive oil, and toss to coat.
Sprinkle with salt and pepper, then arrange in a single layer on a baking sheet.
Roast for 12-15 minutes until tender. Set aside.
Cook the Italian Sausage:
Heat 1 Tbsp olive oil in a medium pan over medium heat.
Add the Italian sausage and break it into crumbles with a spatula.
Cook until golden brown, then set aside.
Prepare the Alfredo Sauce:
Boil water in a large pot and cook linguine according to the package instructions. Drain and reserve a couple of spoonfuls of pasta water.
In a medium saucepan over medium-low heat, dry sauté the mushrooms for about 3 minutes until they begin to sweat.
Add butter and olive oil, tossing to coat the mushrooms.
Once the butter melts, add minced garlic and cook until fragrant, about 1 minute.
Pour in the heavy cream and bring to a simmer, stirring frequently.
Gradually add the Parmesan, Asiago, and mozzarella, stirring between each addition.
Season with salt and pepper to taste. Simmer for about 5 minutes until the sauce thickens and becomes smooth.
Two minutes before removing from heat, stir in the spinach and let it wilt. Remove from heat.
Add the drained pasta to the sauce, stirring in reserved pasta water until evenly coated.
Assemble the Meal Prep:
Divide the Alfredo pasta evenly into four meal prep containers.
Add roasted asparagus to each container.
Sprinkle the Italian sausage on top.
Garnish with parsley.
Storage & Reheating Tips
Storage: Keep in an airtight container in the fridge for up to 3-4 days.
Reheating: Microwave in 30-second increments, stirring in between, until heated through.
