Gomacro Peanut Butter Bar Dupe
Gomacro peanut butter bars are hands-down my favorite protein bars ever. This is my homemade version inspired by them. They are soft, peanut buttery, with hints of chocolate, and made with simple ingredients. I also snuck in some collagen powder for an extra boost (not in the original bar, but I needed more collagen in my diet).
Recipe
Ingredients
½ cup brown rice syrup (or honey)
1 ½ cups creamy peanut butter
¼ tsp salt
¼ cup protein powder (use whatever you have on hand—vanilla or unflavored works great)
¼ cup collagen powder (optional, but I like adding this for extra collagen)
1 cup brown rice crisps
½ cup mini chocolate chips
Directions
In a large mixing bowl (or using a stand mixer with the paddle attachment), combine the brown rice syrup (or honey) and peanut butter. Mix until smooth and fully incorporated.
Add the salt, protein powder, and collagen powder. Mix again until everything is well combined.
Add the brown rice crisps and gently blend for about 1 minute. I like using the stand mixer here to slightly break up the crisps—it gives the bars a nice chewy texture without being too crunchy.
Stir in the mini chocolate chips until evenly distributed.
Line an 8x8-inch baking pan with parchment paper. Scoop the mixture into the pan, then use another piece of parchment paper on top to press and flatten the mixture evenly into the pan.
Place the pan in the fridge for about 1–2 hours, or until firm.
Once set, lift the bars out using the parchment and slice into bars or squares.
Store the bars in an airtight container in the fridge. They stay fresh for up to 4–5 days, tightly wrapped.
