Fish n Chips Two Ways
In this recipe, we’re making fish n chips two ways because I bought that giant pack of Costco cod and ended up with wayyy too much fish. So here’s what we’re doing: classic fish n chips and fish bao buns.
The fried cod is beer-battered using tempura mix, which gives it that extra crunchy, light texture (like McDonald’s chicken nuggets — pro tip: this batter is a great copycat). The cod also gets marinated in a garlic-soy mix for an umami boost.
Also, this was my mom’s favorite bao flavor this week. So that says something.
Notes:
Cold beer matters: The colder the beer, the crispier the batter. Keep it in the fridge until the last minute.
