Baked Bagel Egg-In-The-Hole
Ingredients:
6 tablespoons salted butter, melted
4 everything bagels, halved
4 medium eggs
Kosher salt and freshly ground black pepper
Instructions:
Preheat & Prep:
Preheat the oven to 375°F.
Line a baking sheet with parchment paper and brush it with 2 tablespoons of melted butter.
Prepare the Bagels:
Brush the cut sides of the bagels and cutouts with 2 tablespoons of melted butter.
Arrange on the Baking Sheet:
Place the bagels cut-side down on the prepared baking sheet.
Press the bagels down with your palm to ensure they make full contact with the sheet—this prevents the eggs from leaking.
Bake the Eggs:
Brush the tops of the bagels with the remaining 2 tablespoons of butter.
Crack an egg into each bagel hole. Season with salt and pepper.
Bake for 11 to 14 minutes:
11 minutes for a runny yolk
14 minutes for a fully set yolk
Soft Scrambled Eggs with Gouda & Bacon
Ingredients:
6 large eggs
¼ cup whole milk or heavy cream
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon butter
4 slices Gouda cheese
4 slices bacon
Instructions:
Bake the Bacon:
Place the bacon slices in a cold oven on a baking sheet.
Set the oven temperature to 350°F and bake for about 20-25 minutes, or until crispy.
Remove from the oven and place the bacon on a paper towel-lined plate to drain. Once cooled, crumble the bacon.
Prepare the Eggs:
In a bowl, whisk together eggs, milk (or cream), salt, and pepper until well combined.
Cook the Scrambled Eggs:
Heat butter in a nonstick pan over low heat until melted.
Pour in the eggs and cook slowly, stirring gently with a spatula.
When eggs are soft and slightly runny, place a slice of Gouda cheese on top of each portion of eggs.
Continue cooking for another minute until the cheese has melted and the eggs are creamy.
Assemble & Serve:
Remove eggs from heat and top with crumbled bacon.
Serve in between the Baked Bagel Egg-In-The-Hole
and enjoy!
Love this! Reminds me of the Mortadella Focaccia sandwich recipe I adapted from L.A.-based Roman cuisine restaurant Mother Wolf for easy home cooking!
