This week, we’re back to our regular ingredient prep and dinner recipes. I loved this week’s dinners. I used miso butter in all four recipes and it added so much depth. In some dishes it was the main flavor, but in others it worked more behind the scenes to round everything out and add a deep, umami-rich layer.
I also made focaccia for the first time ever this week! I found my grandpa’s old focaccia recipe on a sticky note (which felt very on-brand for him), and while I tried to follow it, some of the instructions were hard to interpret. So I used another recipe’s technique to guide me but mostly stuck with his ingredients, adjusting the flour-to-water ratio to hit a 77% hydration level. It turned out so good.
