Cottage Cheese and Radish Toast
So for dinner this week, we’re doing a French-meets-American girl dinner—light, snacky, and honestly perfect. It’s basically a glorified toast and dip situation, but it felt elegant and kind of fun.
This dinner starts with toasted focaccia, slathered in miso butter, and topped with thin slices of radish and flaky salt. Sounds weird, but the combo of rich miso butter and crisp radish just works. It’s salty, crunchy, and creamy. Then on the side, cottage cheese with lemony English peas and fresh dill. Very minimal cooking, but the textures and flavors are so satisfying.
Literally two snacks turned into a meal, and I loved every bite. Let’s get into it.
