Chocolate Covered Strawberry Chia Pudding
This Chocolate Covered Strawberry Chia Pudding feels like a little luxury you can whip up with minimal effort. It’s rich, fruity, creamy, and has that satisfying crack of chocolate on top. It is like a mini dessert, but for breakfast.

Ingredients:
1 ½ cups almond milk
½ cup chia seeds
1–2 Tbsp honey (depending on how sweet you like it)
¼ cup freeze-dried strawberries, ground into powder
1 tsp vanilla extract
1/2 tsp salt
1 8-oz chocolate bar (I use Tony’s)
½ Tbsp coconut oil
6 strawberries
Directions:
In a large bowl, mix together the almond milk, chia seeds, honey, freeze-dried strawberries, salt, and vanilla extract. Stir until everything is combined, then pop it in the fridge to set for about an hour.
While the pudding sets, melt half the chocolate bar in a microwave-safe bowl, heating it in two 30-second increments and stirring between each.
Add 1 tsp coconut oil to the melted chocolate and stir it in.
Dip each strawberry into the chocolate, letting any excess drip off, and lay them on a piece of parchment paper to set.
Once the chia pudding has thickened, divide it evenly into six small pudding cups or jars.
Melt the second half of the chocolate bar the same way—two 30-second bursts in the microwave—and stir in the remaining coconut oil.
Pour a thin layer of melted chocolate over each cup of chia pudding. Let it firm up slightly
Sprinkle some salt on top to balance out the sweetness (optional)
Top each one with a chocolate-covered strawberry.
Crack through the chocolate shell and dig in!
