We’re back with another chia pudding flavor, and this time, it’s all about blueberries. This chia pudding is super easy to make, just throw everything in a food processor, pulse it a few times, let it chill in the fridge, and then it’s ready to eat.I topped it with whatever fruit I had on hand—blueberries, blackberries, and grapes. Let’s make it!
Notes:
Food Processor vs. Bowl: I prefer using a food processor for this because it helps blend the blueberries into the pudding. But if you don’t have one, just mash the blueberries with a fork in a bowl and mix them with the other ingredients in a medium bowl.
Fruit: Top with any fruit you like. I used a mix of blueberries, blackberries, and grapes—whatever I had on hand.
Sweetener: You can use whatever sweetener you prefer—honey, maple syrup, or agave syrup all work great.
Yogurt: Use your favorite yogurt. I went with Siggi’s vanilla yogurt, but any will do!
Recipe:
Ingredients:
1 ½ cup almond milk (or any milk of your choice)
½ cup chia seeds
½ cup yogurt
1 tsp vanilla extract
2 Tbsp agave syrup
1 cup blueberries (plus more for garnish)
1 scoop collagen powder
Fruit for garnish (I like blueberries, blackberries, and grapes)
Directions:
In a food processor (or bowl), add all the ingredients and pulse 8-10 times or until well combined.
Pour the mixture into a medium bowl and let it set in the fridge for about 1 hour.
Once it’s thickened up, divide it into 6 cups, then top with your fruit of choice.
Enjoy!
Storage:
These keep well in the fridge for 4-5 days.
