Banana Black Sesame Swirl Mini Loaves
Classic banana bread with a twist. The black sesame swirl adds a nutty, umami richness that balances the natural sweetness of ripe bananas.
Ingredients
Banana Bread Batter
3 very ripe bananas
½ cup unsalted butter, room temperature
½ cup granulated sugar
¼ cup brown sugar
2 eggs
1½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
1 tsp vanilla extract
Black Sesame Swirl
2 Tbsp black sesame powder
2 Tbsp honey
½ tsp dark cocoa powder
Directions
Preheat the oven to 350°F. Grease a mini loaf pan.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
In a separate bowl, mash the bananas to a chunky applesauce consistency. Add the mashed bananas to the creamed mixture, along with the eggs and vanilla extract. Mix until combined.
In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually fold the dry ingredients into the wet mixture until just combined.
In the bowl used for mashing bananas, stir together the black sesame powder, honey, and cocoa powder until smooth.
Scoop about half the banana batter into the black sesame mixture and stir until combined.
Alternate scooping the plain banana batter and black sesame batter into the mini loaf pan.
Use a skewer or butter knife to gently swirl the two batters together in each mold.
Bake for 15–20 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaves cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
