Happy Saturday!
I’ve been a bit off track lately; between onboarding at my new job, getting sick, and helping with a family emergency, it’s been a week. Next week I’ll have a solid schedule again. That means dinner recipes and grocery lists will be back in action, I promise!
This week, I kept things simple with a mix of nostalgic go-to dinner recipes and my favorite butter cookie recipe. Sometimes I like to dedicate a week to making my personal favorites and doing a little recipe testing for upcoming posts. These are my classics; they are comforting, reliable, and delicious.
The graphic is Y2K-themed because two of these recipes are from my grandpa, who used to make them for us in my early 2000s childhood. The third one, the spinach and artichoke pasta, also feels very Y2K because it reminds me of how every restaurant back then had some kind of spinach and artichoke dip. It was every teen’s favorite appetizer… though I wasn’t quite a teen yet.
