Anna Wintour Lunch
Allegedly, this was the lunch of Anna Wintour: buttery Robuchon-style mashed potatoes and a burger patty with grilled onions. Decadent and unapologetically classic—maybe you’ll “obliterate” it like Anna herself.
Robuchon’s Mashed Potatoes
Serves 4
Ingredients
1 lb Yukon gold or yellow potatoes
454g (1 lb) unsalted butter, cold and cubed
¼ cup whole milk
Salt, to taste
Chives, for garnish (optional)
Directions
Place potatoes in a large pot and cover with cold water. Bring to a boil, then reduce to a simmer. Cook for 30–40 minutes, or until fork-tender.
Drain and peel the potatoes while still warm. Let cool slightly.
Using a potato ricer or food mill, mash the potatoes back into the pot.
Heat the pot over medium-high, stirring until steam rises.
Remove from heat. Gradually add cubed butter, stirring until each addition is fully melted and incorporated.
Warm the milk in a small saucepan over medium heat.
Slowly stir warm milk into the mashed potatoes until smooth, creamy, and fluffy.
Season with salt to taste. Garnish with chopped chives, if using.
Burger with Grilled Onions
Serves 4
Ingredients
1½ lbs ground beef (80/20 blend recommended)
Salt and pepper, to taste
1 large yellow onion, thinly sliced
1 tbsp butter
Directions
1. Grill the Onions
In a skillet over medium-low heat, melt butter.
Add sliced onions and a pinch of salt. Cook slowly for 20–25 minutes, stirring occasionally, until deeply golden and caramelized.
If they start to brown too fast or stick, deglaze with a splash of water. Set aside.
2. Make the Patties
Divide the ground beef into 4 equal portions and shape into ¾-inch thick patties.
Press a small indent into the center of each to prevent puffing.
Season both sides generously with salt and pepper.
3. Cook the Burgers
Heat a skillet or grill over medium-high heat.
Cook patties 3–4 minutes per side for medium, or until your preferred doneness.
Optional: Add cheese in the last minute of cooking and cover to melt.
